Modifiers
A modifier group is a question about an item. A modifier is one possible answer.
Item: Cheeseburger
Modifier group: How would you like it cooked? (required, pick exactly 1)
Modifiers: Rare / Medium rare / Medium / Well done
Modifier group: Add ons (optional, pick up to 3)
Modifiers: Bacon +$2 / Avocado +$2 / Extra patty +$5
Required vs optional
Required groups block the item from being added until they are answered. Use them only where the kitchen genuinely cannot proceed without the answer — every required group is a tap a server makes on every single order.
Optional groups can be skipped.
Selection limits
Each group has a minimum and a maximum number of selections:

Modifiers and price
A modifier can add to the item's price, subtract from it, or leave it alone.
Prices are applied on top of whatever the item resolved to along its path — so a
+$2 bacon modifier is +$2 whether the burger came out at $14 or $8.
Modifiers and the kitchen
Modifiers print on the chit under their item. Keep modifier names short — they are read at speed, on a small ticket, by someone holding a pan.
Shared modifier groups
A modifier group can be attached to many items. Editing it once changes it everywhere it is attached, which is usually what you want — and occasionally very much not. Before editing a shared group, check what else uses it.
Where modifiers are offered
A modifier group can be switched off for a channel — available on the till but not online, for instance. See Channel visibility; this is a common source of "why was the guest charged for something the website never showed".
