The time-zone rule
Reports bucket by the restaurant's own time zone. A day runs from the restaurant's business-day start to the next, in local time.
This is the cause of most "the numbers are off by a bit" reports. If you are looking at a Denver restaurant from a laptop in New York, the boundaries are Denver's, not yours — and a sale at 11:30pm Denver time is on the Denver day, not the next one.
Business day vs calendar day
A restaurant that closes at 2am is still on the previous business day at 1am. The business-day boundary is configured per restaurant and is what reports use — not midnight.
On the till vs in the back office
The till carries a subset of reports for the current shift and day, so a manager can close out without a laptop. See Reports on the POS.
The back office carries history, comparison across periods, and anything spanning more than one restaurant.
Exports
Reports can be exported for a spreadsheet or an accountant. An export carries the same period and time-zone rules as the on-screen report.
